I still remember I tasted my very first cutlet with my friends in Neyveli which one of my favourite place too. Though I lost contact with my Neyveli friends I always remember the days we spent together. Hope if any of my friends browse this recipe will contact me.
Cutlets are well known appetizer/Starter. Itz simple ,healthy and easy to make. Different color veggies are used. Kids will love this since it won’t be too spicy.
Ingredients
- Carrot -4
- Potatoes – 4
- Green Peas – 1 cup
- Cumin seeds – 1/4 tsp
- Onion – 1
- Green chillies – 5 to 6 (avoid this if making for kids)
- Ginger(very small piece)
- Red Chilli Powder
- Garam Masala powder
- Salt
- Coriander leaves – a small bunch
- Eggs – 2
- Bread crums – as needed
- Oil to fry.
Preparation
- Boil the potato and peel it and mash it with hand and keep aside.Cook peas and chopped carrots seperately. When its done cool it mash it with hand.
- Heat the pan with 1 tsp of oil. Saute cumin seeds .
- Add and Fry chopped onions, chopped green chillies and finely chopped ginger,chilli powder and garam masala powder.
- Transfer the contents into bowl. To this add mashed potato,peas and carrot.
- Add the chopped corriander and curry leaves(optional).
- Add Salt and mix well . Care should be taken not even a drop of water is added at any time.
- Make ball out of this mixture ,flatten and shape like cutlets by pressing and keep ready.
- Break the eggs in seperate bowl. Dip the shaped cutlets in egg and roll them in bread crumbs.
- Heat flat bottomed pan or dosa tava with little oil and shallow fry this.
- When one side is done turn the other side and cook till both sides are brown.
- Serve with chutneys or Ketchups.

This recipe I got from SunTv’s local kitchen. The reason why I am posting this is ,this can be treated as Kids food. Kids will love it and itz healthy food too. For kids who don’t like chutneys this dosa is good since it can be eaten like a snack. Speciality of this dosa is no need of Fermentation and also no need for Urud dhal.
CARROT DOSA
Ingredients
- Idli Rice (or) raw rice – 1cup
- Carrots – 2 (not baby carrot)
- Red chilli -5( upto 7)
- Perungayathool – 1/4 tsp
- Cumin (jeera) – 1/2tsp
- salt- as needed
Preparation
- soak the rice for atleast 5 hrs.
- Grind the rice, chillies,grated carrots,Perungayathool(asefotedia powder),Jeera seeds,salt by adding little water in mixie like dosa batter. Don’t make the batter too watery.
- Heat the dosa tava. When it is ready pour the batter and spread and sprinkle little oil on the top. When it is done on one side turn it and cook other side too.
- Sometimes dosa may break. So pay little attention while turning the dosa.
- Serve hot with your favourite chutney’s.

I have read carrot halwa recipe in so many places and tried out all. Among all this recipe is my favourite and is really good. Now I am following only this way to make carrot halwa.
Ingredients
1. Carrots – 1 lb
2. Milk – 1 cup
3. Sugar – 1 cup
4. Ghee – 3 tsp
5. Cashew nuts for garnishing
6. Raisins(Dry grapes/ munthiri) for garnishing
Preparation
1. Peel the carrots and grate them.
2. Soak the grated carrots in the milk and pressure cook.
3. Heat sugar and ghee in a non stick pan.
4. Add the pressure cooked carrots and milk. Stir well.
5. Keep the lid closed in between stirrings, as there maybe some splashes, when the milk and ghee boil together.
6. When the milk condenses and the halwa begins to thicken, remove from flame.
7. Garnish with cashews and raisins roasted in ghee.
Alternate method
1. Chop carrots into small cubes and pressure cook in milk.
2. Grind this pressure cooked carrots(with milk) into a smooth paste.
3. Proceed like the first method from step 3 onwards.

During my school days my mom used to make diferent types of variety rices to pack our tiffen boxes. One among is Carrot rice. It won’t become dry in the afternoon when you open your lunchbox. It is fresh always. Since carrot is very good for health we have to make our kids take carrot in one or the otherway. If they eats fresh carrots it very good.
Also sometimes making items just to finish the contents of the fridge is somewhat difficult, especially when my mind is focused on other things like getting clothes sorted for the trip home, making sure I have lists of what to take (and more importantly, what to bring back with me!) and so on.Anyway, with just over a kilo of carrots to finish in the next couple of days, carrot rice inevitably found itself on the menu.
It’s very simple to make carrot rice (apart from the carrots, haha) are a couple of onions and a tomato – items that usually are at hand in most kitchens

Ingredients
- Grated carrot - 1 cup ( can add more aslo)
- Basmati rice – 1cup
- Cinnamon – 2 small pieces
- Cardamom – 1
- Cloves – 3
- bay leaf- 1
- Cilantro – little for garnish
- Onion – 1
- Tomato -1
- Oil - 2 tbsp
- Chillies – 3
- Red chilli powder – 1/2 tsp
- Turmeric powder – a pinch
- curry leaves – little
- Salt to taste
Preparation
- Cook rice with little salt and allow it to cool. All the grains should be seperate. So for 1 cup rice add 1 to 1 1/4 cup water
- In a pan pour oil ,add cinnamon,cardamom,cloves ,bayleaf and let them splutter. Then add curry leaves.
- Add chopped onions,chillies,chopped tomato and fry well.
- Add the grated carrot ,turmeric powder,red chillipowder and salt . Fry for 5 -7 mts.
- Then add the cooked rice to the pan and mix well and garnish with cilantro.
Tips
Above is the basic version of carrot rice.To add richness to your food do the following.
- Add llittle peas (frozen) along with grated carrot .Different colors make the food looks good.
- If you don’t have frozen peas soak the peas overnight (or for 8 hrs) then cook is first and then add.
- You can fry cashews in ghee and you can sprinkle on the top.
