This is another recipe from left over. This is called Kothu chappathi/kothu roti made from left over Chappathi’s. This you can made with fresh chappathi too.If you have few chappathi’s and you want to make that quantity more or you want a different dish out of it then you can try this recipe. The sucess of this recipe is it can be made in few mins.
Kothu chappathi

Ingredients
- Chappathi – 2
- Onion medium size – 1 (cut this)
- Tomato small size – 1 (cut this)
- Cabbage lengthy cutted – 1 cup
- Chilli powder – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Pinch of salt
- Little oil ,Jeera and curry leaves for tempering
- Corriander leaves for garnishing
Preparation
- Heat oil in Tava . When it is hot add Jeera and saute it.Then add Curry leaves
- Add onion and fryfor sometime (cut this)
- Add Tomato and fry
- Now add Cabbage and mix well
- Then add Chilli powder , turmeric powder and a pinch of salt
- Let the things cook for few mins. Mean time cut or tear the chappathi/ roti into pieces
- Add the chappathi pieces and mix well and cook for few mins and finally garnich with Corriander leaves
Recipe 1:
If raw syrup is left then, add 1 teaspoon lemon juice for 1 cup of syrup. Boil for 5 minutes. Add saffron and banana slices in it. It makes delicious SudhaRas. This tastes delicious on pancakes. Variation is instead of bananas, one can add pineapples or strawberries.
Recipe 2:
One can use it in all curries and vegetables as a substitute to jaggery.
Recipe 3:
One can make Sakharbhat /like sakkara pongal using the same syrup. If one-string syrup is left, then boil it for a minute and then add chopped almonds, saffron,cardamom powder, raisins and 1 cup cooked rice for 1/2 cup of syrup.
Just sprinkle some water over the Medu Vada and nuke it on high for 2 mins. Meanwhile beat curds with a little sugar, chopped green chillies and some kothimbir. Mix in the warm medu vada and adjust taste.
You can roast peanuts in microwave too. Just use any microwave safe bowl,preferably square.Take 2 cups of peanuts & put them in microwave for 3 minutes first. Take them out & stir them for few seconds. Then put them again in microwave for 2 minutes.Just watch it carefully otherwise they will burn. You will know from their color when they are completely roasted. Generally it will take around 7minutes. Try it.

Cooked rice Vada
Ingredients
- wheat flour – 1/2 cup
- left over or fresh cooked rice – 1/2 cup
- green chilli- 2 fine chopped
- small size onion – 1 fine chopped
- Red chilli powder -1/4 tsp
Note:
For richness you can add corriender and curry leaves too.
You can use either red chilli powder or green chilli alone. Nothing is compulsory
Preparation
- Take a bowl and put left over or fresh cooked rice ,wheat flour, green chilli,onion,chilli powder, corriander and curry leaves (optional) in it.
- Sprinkle water and mix all well. all should get blender well. Wheat flour will act like binding agent.
- Make small balls. Flattern them and fry in oil.
- Crispy ,Tasty rice vada is ready.
Tips
Eat hot. You can eat this with chutney’s like coconut chutney, sambar etc.
